Elderflower Cordial
It's not too late! A quick recipe...
Pick 20 elderflower heads from your nearest hedgerow, trim off stalks and put to one side to allow the bugs to go free. Put 2.5kg of white sugar into a large saucepan with 1.5 litres of water. Gently heat without boiling, and stir until the sugar has dissolved. Then bring the syrup to the boil and turn off the heat.
Grate the zest of two unwaxed lemons then slice the lemons into rounds.
Add the flowers to the syrup along with the lemons, the zest and 85g of citric acid and stir well. Cover the pan and leave to infuse for 24 hours.
Strain through a colander lined with a muslin and pour into a container and refrigerate or freeze.
Serve in one of our jugs or decanters, or bottle it in one of our mini decanters and give as a gift.
